    Dry Aged Fridges: What They Are and Why Use Them

      Tutorials are constantly found on the Internet on how to make meat such as beef steak ribs and other meat products. But they are only telling you that they are using dry aged meat or that the meat they are using has been aged for a few months. They are not telling you how to age the meat itself. Make no mistake, dry aged meat is not simply putting it in the fridge and waiting until it’s done.  

     


    Temperature Of Aging Process

     

       When undergoing the dry aging process, your meat needs to maintain a low temperature, The temperature is usually between 1-4°C, the reason is that it cannot go above or below that setting, and the fluctuation range cannot be very large.Although the regular home use refrigerators provide a cooling environment, but unstable temperature changes make it impossible to restore the original environment perfectly.


     

    The “Weather” Of Aging Process

     

    The aging process is like snow in Alaska; cold and wet. Which means bacteria can form during the dry aging process rendering the meat inedible, and making it harmful to your body. So, apart from the temperature, accurate humidity is also important.

    The maturing process requires a cabinet with precise temperature control, humidity, and sterilization. And these conditions cannot be achieved with regular home refrigerators. They will only prevent the dry aging process.That’s why having a Dry Aged Fridge is key.
